Apple pie filling first...cut up apples almost to the 8 mark in my stock pot.
Apple Pie Filling
7 qt chopped up apples (in salt water/lemon juice to keep fresh)
4 1/2 cups sugar
1 cup cornstarch
1/4 tsp nutmeg
2 tsp cinnamon
1 tsp salt
3 tbsp lemon juice
10 1/2 cups water
Set/pack apples aside in jars and cook remaining ingredients into a syrup. Pour syrup over top and process for 15-20 min in hot water bath. (Process in warm water up to bottom of lids and start to time when the water starts to boil).
VARIATION FOR IMMEDIATE USE
I chopped all the apples up and put a few cups of water and some lemon juice with them.
Then I made a syrup, but not as much water, as I wouldn't be processing them the same way. Made a gooey syrup, added it to the apples, stirred a little, cooled and then put directly into the pies. I think it made 5-6 apple pies...

2 tbsp flour
1 tbsp cornstarch
1/2 tsp salt
1/2 cup brown sugar
2/3 cup white sugar
1 tbsp butter
2 tbsp lemon juice

I love any pie with berries in. Mmm. Favorite is peach-raspberry. Yum!
I love the BC peaches we get here in August, but still waiting for my raspberries to get producing. Really miss all the berries we could just go out and pick in Manitoba.
