Banana Coconut Loaf


Banana Coconut Loaf
2  eggs
1 cup white sugar (use a little less and mix with brown sugar for an option)
1/2 melted butter
1 cup mashed ripe banana (use up those blackies!)
1/2 tsp almond flavoring (or try coconut)

1 1/2 cups white flour
1/2 cup coconut
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts

Beat eggs, add sugar.  Mix.  And butter.  Stir in mashed banana and flavoring.

Dry ingredients into a bowl, make a well in center, add wet ingredients.  Stir until combined, spoon into a greased loaf pan.  
Bake 350F for 1 hour or until toothpick inserted in the middle comes out clean.  Mine always take 60 minutes.  Remove onto wire rack and let stand for 10 minutes then remove.  Cool and wrap or just EAT IT~

Great way to use up black bananas, etc.  Wonderful flavor that differs from regular banana bread.
