Gluten Free Crepes Recipe ~ Flat or Skinny Pancakes

Just starting our journey into the world of "Gluten Free" cooking and this is the start of my blogging on what has worked and not worked so far!
On Sundays we have a tradition of eating "Skinny Pancakes" or "German Pancakes" or Crepes.
What to do now?
I used my regular recipe and substituted the flour for the gluten free flour mix in the picture below.

For you Mom ~  Save On Foods had it
Crepes, Skinny Pancakes, German Pancakes Recipe
3 eggs
beat in blender
add 1 1/4 cup milk (I do part water)
Add a splash of vanilla
Then a dash of salt
Whip up in the blender again
Add 1 cup of the gluten free flour mix
Whip up in the blender again
These cooked up a little more fluffy and with some air bubbles ~ maybe from being in the blender?  They taste good!!!

These rice noodles above were VERY tasty, but they were constantly running over in my large pot.  Some others told me later to "soak" them in hot water instead, so I will try that next time.

Don't under cook anything Gluten Free... I think it needs more baking time!

Alfalfa Sprouts ~ My 1st attempt ~

I used a little plastic box with tiny holes in the bottom, a lid, and a divider.  It is called Sprout Master and I don't have the bottom piece, so I put it into a Tupperware container as it sat on the counter.
With no instructions on "how to sprout"... I just took 2 even tablespoons of alfalfa seeds and sprinkled them into the sprouter.  I ran water over them, put the lid on, sat in down in the Tupperware container and left it on the counter.

It looked like this the first day

Hard to photograph, they started showing little bits of white

Ok, now the alfalfa looked like it was growing worms...
I looked at it in the morning and evening and if it was looking "dry", I ran some water over it and then put it back in the container.  Some seeds fell through the holes, so I poured them back in.
A few days later they are really starting to show some promise.
Here I'm wondering if we should be eating them... but we leave them another day...

This is within 1 week and they are PACKED in there!
They tasted great!  They were packed tightly so I guess I don't need a full 2 tbsp full of seeds.  We ate a bunch and had them sitting on the table to munch on.  Then we forgot and didn't put them in the fridge... so some were starting to grow some other white fuzzy stuff (yuck) so we gave them to the chickens and they did NOT mind it at all.

Thrifty note:  I paid $13.30 for 1 kg of seeds.  I used 2 tbsp of that to make what looks like 4 of those little containers in the store.  Here they sell for $2-$4 per container.  So by sprouting my own 2 times, the seeds have more than paid for themselves!

Now, that said, I just read somewhere that they are not good for you... anyone else hear this?  I realize that the more books I read, the more I won't know what is true and what is false... but... just wondering...

A gift of flowers

Sweet pink hues of a flower true
a gift of a hearts emotion
to show a love so pure and kind
from a daughter's hands
into her Momma's heart forever

Thank you dear daughter for sneaking your way around the grocery store and with your gentle way ~ showing me your heart...

A birthday girl ~ we've got one around here!

Our sweet little middle child is turning 11 years old!  How does that happen?

A newbie Ruth
I'm sure most of us always remember the day of their birth and all the little "firsts" that came along the way and then sit back and ponder "wow, this IS going by fast! Mom was right!"
My girls ages 1, 3 and 6 Notice no shoes on Mei, she always moved her feet too much.  Note Ruth is wearing purple again and Kate is watching to make sure everyone is smiling and being good!
We can't believe how fast those young child rearing (keep them alive years) go by and love all the memories we made.  Still, we always think we need to "seize the moments" because we know they won't always be there or be the same.
Now, onto Ruth's party to celebrate 11 years of living life in our family!

I wasn't sure how the party was going to turn out ~ would it turn out like the flop of a cake above?  At least the next 2 cakes turned out well and the party was ON!
We had 2 friends come early for a pizza lunch and then 2 other friends came after lunch.

Played some games... this one was "find the letters to spell P A R T Y"
Playing pass the "hot present" around.  Unwrap 1 layer of wrapping each time the music stopped.  They unwrapped a cookies n cream chocolate bar and then they all shared it.
I succeeded in surprising Ruth with her own apron ~ something she's been wanting for a long time and of course, it HAD to be purple.

Time for cake!

Drawing with fabric pens on some aprons for their dolls.

Mei wanted me to do a pansy and blue bells.  At least she thought they were beautiful!
Saw the birthday girl and Mrs. S taking a reading break.

No party is complete without a little dress up craziness!
Here they were teaching people about brushing your teeth ?

There was no sleepover this year, so instead we had a special movie night with Ruth and Mommy and Daddy.  Ate some cake and chocolate and cuddled up on the couch.  What a simple thing to do and yet she felt SO special as we had never done this with her before.
What a precious happy little daughter we have been blessed with and
Happy Birthday Ruth on the 13th!

Belated Home Learners Valentine's Party

Oh yes, I am behind!  I can only upload a certain amount of photos, so here goes a belated Valentine's blog.
Some local home learners opened up their home to us for a wonderful party!  Now, I will not covet her homeschooling room ~ the whole upstairs of the shop!  My dream will someday become a reality!

Everything was so incredibly organized and done up so beautiful and pretty like ~ we all felt very spoiled!
 Heading to the homeschooling room!
The boxes to decorate and then fill with Valentines!

Some of the Valentine's were very creative!
We all had a lovely time and were so happy to have someone open up their home like this for a gathering!  It was a lovely day for me too, as my hubby was away and I got to have some visits with some other Mom's while the children played and got to know each other.
